VINO ROSSO

A playful and highly drinkable red wine that breaks the rules of many conventional protocols, Rivedibile is the «enfant terrible» of every tasting commission.

I am not sure whether I chose him or he chose me: the fact is, this wine slipped out so iridescent and unpredictable that it was impossible for me to tame its personality.

Either way, I like it like this: fresh like the sea breeze that blows through the vineyards, savory and spicy like the aromatic herbs that grow wild along the Belìce River.

Grapes: blend of native grapes produced in Belicello
Soils: medium texture, predominantly clayey, with little or no stones
Vineyards: average 15 years old, vertical shoot positioning, Guyot
Winemaking: skin contact in amphoras and oak barrels, with manual punching downs
Alcoholic fermentation: spontaneous, with wild yeast
Malolactic fermentation: spontaneous
Refining: 6 months on fine lees, in amphoras and in large Slavonian oak barrels
Average production: 4.000 bottles/year

WINEMAKING

Rivedibile is a red blend of native grapes, farmed according to biodynamic principles in Tenuta Belicello.

Grapes are hand selected and picked between the end of August and early September, and collected in small baskets to ensure that they get to the winery intact. After destemming and crushing, the wine ferments spontaneously in amphoras and oak barrels, with manual punching downs. Malolactic is also spontaneous.

All fermentations completed, the wine refines refines for 6 months on its fine lees, both in amphoras and in large Slavonian oak barrels. 

No fining and no filtration before bottling.
Aging potential is about 2-3 years.

 

FOOD PAIRING

Rivedibile is a red wine for every day and every meal, very easy to drink and to share with friends.

Its light and bright ruby color reveals a dynamic structure and a slender body. Tannins are smooth, and its pleasant acidity cleanses the palate, making it the perfect wine for food.

Ever had a Sicilian merenda? That's the wine for you: ham and cheese, Catelvetrano olives, a simple panino with mortadella Bologna, or fried arancini with red meat sauce.
